Chimichurri is a blend of parsley, oregano, garlic, olive oil, red wine vinegar and other herbs and spices. This sauce, which works equally well as a marinade, is enjoyed with grilled meats well across Spain and throughout Latin America. Legend has it that an Irishman, Jimmy McCurry, invented this sauce to accompany the Asado, the famed Argentinean barbecue of monumental scale. The Gauchos, Argentine Cowboys, loved the sauce but found the Irish name difficult to say and transformed it into Chimichurri. Delicious simply poured generously over grilled meats and sausages. Ideal as a dressing for vegetables or fish. Can be used as a marinade for meat or vegetables before grilling, ideally for an hour before cooking. Mixed with some mayonnaise, Chimichurri makes a delicious condiment for any table. |
