Our Pimientos del Piquillo al ajillo are a unique variety of the finest sweet red roasted Piquillo Peppers, especially preserved with a clove of garlic to add depth to the peppers' wonderfully rich taste. Their characteristic “piquillo” triangular shape (from “pico”, beak), their smoky smell and beautiful storng red color are unequivocal signals of identity. They're roasted over log fires, and harvested, peeled and packed by hand to maintain their delicate flesh and finest flavor.

Roasted Piquillo Peppers are unique to this world. From the time they begin to grow peacefully in the fertile tierra of Navarra until they are preserved, they have never been touched by machines other than the human hand. They are harvested in the autumn and roasted over log fires before hand-peeled by groups of women in the small family owned-producers of the region. This is how the auténticos Pimientos de Piquillo acquire their distinctive meaty flesh and characteristic smoky flavour, setting them miles apart from peppers from other regions. Previously only grown for local consumption, only in recent years have they been marketed outside of Navarra. The Pimientos de Piquillo were only discovered in the rest of Spain when families spending the summers in the Ebro Valley would bring them back to the cities after their holidays had come to a close.
