Roasted Piquillo Peppers with Golden Cooked Garlic

The Piquillo Pepper is a very versatile ingredient in Spanish cooking. Here we simply heat the peppers in olive oil with garlic to enhance its sweet, smoky flavour. The heated peppers can be enjoyed on their own, as a filling with crusty bread or with a contrasting cold food such as white tuna. |

Ingredients
- 1 jar La Buena Vida piquilllo peppers, drained and juice reserved
- 1 clove garlic or more if you prefer, sliced
- 1 tablespoon olive oil
Instructions
- In a shallow pan, heat the olive oil over a gentle heat.
- Toss the sliced garlic in the oil, add the peppers and heat for 2- 3 minutes.
- Add half the piquillo pepper juice and turn the peppers over and heat for a further 2- 3 minutes.
- Serve and enjoy!
Tips and Variations
- Golden cooked garlic is a delicious component of this dish. However, if the garlic is overcooked and brown, it is better to remove the cooked cloves as they will take on a bitter flavour.
