Tortilla de Patata

The authentic Tortilla de Patata, proudly served at every home and tavern in Spain, is our most typical dish (and probably the first one any Spanish mum teaches us to cook). Potatoes, eggs and a pinch of salt are the foundation of a delicious Tapa good for lunch, dinner or as a party nibble. The secret is cooking with fresh ingredients to keep the flavour and texture of the mix (so, please try the real experience and forget the pre-cooked ones). The Tortilla can go together with a good red wine, but a cold beer is a wonderful pairing as well.. |

Ingredients
- 4-6 new potatoes, thin sliced (Alternatively use La Buena Vida Spanish Omelette Pack)
- 4 eggs
- A pinch of salt
- 2 tablespoonful good quality olive oil.
Instructions
- Peal the potatoes, cut in thin slices and salt as desired.
- Fry the potatoes in oil (preferibly olive oil) at medium heat for about 20 minutes.
- Stir the potatoes from the oil.
- Alternatively, skip steps 1 to 3 by getting the ready to cook potatoes of La Buena Vida Spanish Omelette Pack, and just heat them with a tablespoon of Olive Oil for 5 minutes.
- Whisk four eggs in a bowl with a pinch of salt, add the heated potatoes and mix through.
- In a medium sized pan, heat half tablespoon of Olive Oil over a medium heat and pour in the mix. The Tortilla is ready to flip when it's cooked about 1cm from the edge of the pan.
- Flip the Tortilla by firmly holding a plate larger than the pan on top and invert the pan allowing the Tortilla to fall onto the plate, cooked side up.
- Gently slide the Tortilla back onto the pan, cooked side up.
- Cook for another few minutes and it will be ready to share!
