Spanish Omelette with onion and other varieties

In Spain we love variety and the most famous dish in our tables has incorporated accross time additional ingredients. The most common is onion, which results into a slightly different and tasty Tortilla de Patatas. Some other widespread varieties include chorizo, jamón serrano -Spanish ham-, or green peppers. |

Ingredients
- 4-6 new potatoes, thin sliced (Alternatively use La Buena Vida Spanish Omelette Pack)
- 4 eggs
- A pinch of salt
- 2 tablespoonful good quality olive oil.
- Additional ingredient of your choice: onion, chorizo, Spanish ham, green peppers...
Instructions
- Peal the potatoes, cut in thin slices and salt as desired.
- Fry the potatoes in oil (preferibly olive oil) at medium heat for about 20 minutes.
- Stir the potatoes from the oil.
- Alternatively, skip steps 1 to 3 by getting the ready to cook potatoes of La Buena Vida Spanish Omelette Pack, and just heat them with a tablespoon of Olive Oil for 5 minutes.
- Chop the ingredient of your choice in small pieces, salt and heat on a tablespoon of olive oil. Onion will be ready when it is a bit golden.
- Whisk four eggs in a bowl with a pinch of salt, add the heated potatoes and mix through.
- In a medium sized pan, heat half tablespoon of Olive Oil over a medium heat and pour in the mix. The Tortilla is ready to flip when it's cooked about 1cm from the edge of the pan.
- Flip the Tortilla by firmly holding a plate larger than the pan on top and invert the pan allowing the Tortilla to fall onto the plate, cooked side up.
- Gently slide the Tortilla back onto the pan, cooked side up.
- Cook for another few minutes and it will be ready to share!
